starting cypress from potted 3' tree

I just recieved two bald cypress trees in the mail that I ordered. They are about 3' tall. I want to make a traditional upright bonsai and I don't care for the chopped off look. The trees are about 3/4" at the base. I would like the mature trees to be about 2' to 2 1/2' tall. Where do I go from here? Do I go ahead and chop them off at the final desired height? Do I plant them in a big pot to let them grow for a few years before moving to a bonsai pot?

There is no judgment in what I'll say. An experienced grower would put the tree in the ground or a large training pot and begin to work on the roots and inducing taper into the trunk. Less experienced growers are more apt to want to get the tree in a pot and develop some branches immediately, so it at least looks like a tree.

Properly done, and with some consideration to the orientation of the tree based on the root structure, you can chop a tree without it looking like it was chopped. IOW, you can induce a nice even taper through chops with any lingering scars facing the back of the plant if you do a little planning ahead.

If you're talking a 24-30" tree, you should probably be aiming for a trunk caliper of 3.5-6" with a gradual taper in it ..... so that means several chops over 3-5 years.

It depends on your vision for the tree. Some are grown with a natural looking flat top - others are grown with a jinned top - branches only. Some are grown with a dead trunk showing above a flat top .....
