Sweet Potato as Houseplant

I'm planting a sweet potato in a jar of water hoping to make a houseplant.
There aren't any roots or nubs of roots at either end. So which end do I keep in the water?
I want to grow this to remember my beautiful aunt, Esther, who had a huge plant of it.
It's so amazing that her name was Esther, as she was beautiful like the Biblical Esther.

I don't put the roots in water. I wait for them to sprout "dry" in a fairly warm place (for me, it's in the fruit bowl in the kitchen). Then when the sprouts get big enough (about 3-4 inches long), I put the sprouts in water and they root very quickly. I've tried putting the whole root in water and it just never worked for me. Good luck!
