Potting-up / re-pot / transplant to larger container?

I have zucchini, haogen melon, and rosa bianca eggplant in containers on my roof. Everything is doing really well so far, but I am worried that the containers are too small. I used these "Plant Spas," from the Dollar Store (http://www.backyardstyle.com/shop/index.php?page=shop-flypage-44350) the 12" size. Are these too small? I am trying to be very precise about watering and feeding the plants but if it turns out that the containers are too small, is there any way I can "Pot Up" or transplant my mature healthy plants to a larger container? I have had very bad luck doing this with house plants in the past.

If you only have one plant per container, you should be all right for the short life of the plants you are growing. If you think they are getting pot bound, you can slip it out of the pot and take a look. Al
