kernels on asian corn (in containers)????!?!

I am growing asian baby corn and it is supposed to be picked a few days after silks appear. I did that once and there were corns that looked like this...

I have been sick recently and missed my picking window on many ears. Now when I picked it, they look like this...

Which is correct?!? Is there any reason one is better than the other? Can I still eat the "kernel" ones?

Sorry, I can't say if you CAN eat them or not, we couldn't but do you have a photo of your setup. I didn't plant any this year because I just didn't have room for them and didn't think to use containers. Sounds like a great idea and I'd like to see how you did it.

We grew this type in 2010 and found picking them at the stage pictured in the first photo had the best flavor. We tried them raw and steamed but picked late they were just too "woody" to eat.

Sure you can eat any stage but as kngskid mentions it starts getting tough past a certain stage of development.
