Best crops rocky NJ?

I need some advice/help! We want to start a farm in Northern New Jersey. Our land is hilly and rocky with many trees (not sure what kind, they're skinny.) We also have a pond at the base of the hill and a running stream that feeds into it.

I was wondering which crop would be best to plant in rocky terrain? We were thinking of Christmas Trees or perhaps Lavender? We're originally city folk, but with a green thumb and we really want to learn and get our hands (literally) dirty!

We were also considering honeybees and/or other livestock. (I'm have advance degrees in animal behavior and conservation).
