Ground cover in chicken pen

Does anyone maintain a ground cover in their chicken pen? I tried clover last year, but I think it was too delicious.... Looking for recommendations, particularly for New England. Soil is rocky loam/clay. It would need to be something that really likes nitrogen, has deep roots, and is fairly durable. For what it's worth, burdock grows really well in this environment. Seed sources would also be helpful.

I've always wanted to do this very thing, but have not.

I envisioned putting some sort of screen over the ground cover, maybe over grow boxes or similar, so it could grow and be eaten through the wire when it gets tall, yet not get trampled or scratched to death.

Be interesting to hear if others have done this and how they made out.
