Planting potatoes in the fall

So, we have a fine crop of potatoes, out in the garden that is lying fallow. There were potatoes in there a couple of years ago, and both last year and this, we had volunteers come up (Obviously we're not digging them all up.)

Incidentally, this area has a good 4 inches of horse manure and straw piled on. Have to pile it somewhere!

So, my question. Why can't we just dig up an area of the garden in October, plant a crop of potatoes, and cover it up with lots of straw and manure over the winter.

Has anyone ever done this? I think that the mulch is crucial in damping temperature fluctuations, and keeping in moisture.

I think it would have to depend upon your winter. Obviously the manure and straw have kept the ground warm enough for the potatoes to survive. You could probably do it but be prepared for an occasional crop failure...
