Do all banana peppers turn red?

I've been doing some research on when to harvest banana peppers, and the consensus seems to be when they are yellow or wait until they turn red. I have a few that I "think" are yellow, but I can't really tell if they are yellow or still green. Is there any danger in leaving them a little longer? Do all banana peppers turn red? If so, I may just wait until they start to turn red. How do I know if I'm starting to wait a little too long? Thanks!

Honestly I have never seen one turn red in all my years of growing them. But the yellow color will be quite apparent to you once you see it so leave them longer - it won't hurt anything.

Colors may vary from variety to variety but yellow is what I go for.

I grew some sweet ones last year, and they do eventually turn red, it just takes quite a while. I did not notice much difference in taste either, so I just picked most of them when they were yellow.

Yeah, they'll turn eventually, but it will likely take over a month for them to do so after they reach full size.
