When to harvest arugula?

Hi - I am growing arugula for the first time, and when I bought it, all it said was maturity was 45 days. From what? How do I know when it is ready to be harvested? Thanks in advance for your help!

harvest any time- i usually start with baby at a couple of inches tall... it will regrow. gets hotter once it starts to flower.

they are extremely resilient. Just cut away whenever a leaf is 2" or larger, make sure you don't cut into the stem....
