Cucumbers are all bitter. Why?

I've never grown cucumbers before as they're not my favorite thing to eat, especially in large numbers. But I grew them anyway and I've been disappointed in that all but one so far have been bitter tasting. I thought maybe it was the variety but I tried one tonight that was very pleasant and normal tasting for a change.

The plant has seemed happy, sprawling, and productive.

What makes cucumbers bitter? Not enough water? Too much water? I don't know if I'll bother with them next year, but I'd like to know what might have gone wrong in case I do.

Mostly it's about variety. Burpless cukes lack the bitter gene, so they can't go bitter. Most of the bitter compounds are just under the skin, so if you peel your cukes they may be more palatable.

Variety and not enough or inconsistent water availability are the two most common causes.

Armenian cucumbers are never bitter, even if they get 10 lbs. they're a melon but taste like a great cucumber. More heat tolerant,too.
