Lemon Cucumbers

How can you tell when lemon cucumbers are ripe? Are they better picked small, or will they get tough if I leave them on the vine too long? And how do you slice them - in wedges like an apple, or in slices like other cucumbers?

We pick our lemon cucumbers when they are a very light yellow sometimes a bit earlier when it's still a bit whitish green. We've missed a few and picked them latter which I don't mind even though it has somewhat tougher seeds picked when it matures more.
