Curing Sweet Potatoes

Hello All,

I have read over and over that you need to cure sweet potatoes at 80-90 degrees and 80 - 90% humidity, but, no one ever says how to do this in northern climates. We simply don't have that weather here at harvest time and I don't know how to create it artificially without risking a fire! Any ideas?

Good question. I'll be needing the information too. We have electric baseboard heaters (that we don't use) in each room. My first instinct is to turn one on in a bathroom, and also use a humidifier. I'll be interested in any follow-up posts.

I have been curing sweetpotatoes at 86 degrees for a few years. About 10 days length of curing is recommended.

What I have found is that longer than 8 days of curing can cause sprouts to start forming and I suspect that the high humidity makes sprouting worse. So I close a bathroom door and cure at 86 degrees for 8 days and don't try to increase moisture .

Well we let them dry and placed them in our cellar[Michigan] where it stays cool. Just to not turn them over once they have been placed as the sugar tries to move and rots the sweet potato.

I put them in my closed up car for several days. Seems to work fine.
