What is this? Seen all over Lindsay, Ontario, Canada

Can someone here please tell me what on earth is this plant/growth/alien specimen that looks to me like a radioactive deformed pineapple is and what it's doing all over this small town in Ontario, Canada? It looks tropical and so out of place but I spotted it all over the place in the Kawartha Lakes/Lindsay area of Ontario on a recent road trip and am obsessed with knowing what it's deal is. It was both on land and in water, and looks menacing. Can I add more than one picture?

Looks like the rhizome of the Bullhead water lily.

Nuphar from the planet Nymphaeaceae. Looking for new worlds to conquer, from the look of it. Pretty funny.

I.e., spatterdock or bullhead lily roots. Genus Nuphar, not sure what species you'd have up there.
