grows like a weed; probably is one

This appeared about three months ago in a square foot garden box. It is about 42 inches tall and 2-3 ft in diameter. The leaves are 5 x 1 and 7/8 in. velvety, ribbed, with a light green underside and red stem. The taste is similar to spinach or romaine (not pungent). The plant's stalk is smooth and brown. No flowers are visible yet. Is this an Ohio variety of butterfly bush?

I think I'd go with an Amaranthus sp.

Pigweed would be an Amaranthus.
