tricolor amaranthus seeding?

I planted some tricolor amaranthus in my deck pots. I decide it was too tall and skinny to use in pots again, but it might look nice in my garden among other tall plants.

It has lost all it leaves, with just the central stalk left, with some light brown fuzzy things where the leaves were. I am guessing the seeds are in there.

Can I just cut these off and broadcast them into my main garden, to get some next year? Thanks.

Since you're in such a cold climate, I think it might be better to put those seed heads, if that's what they are, in an envelope and save til next year to plant.
