Dracaena marginata bonsai

Hi all.. I have an 18" inch tall dracaena marginata that I had purchased last year at a walmart.. it was unlabled like usual but I bought it anyway. It took me a bit of online searching to find out what it is, but now that I know and have read up on it, I was surprised to find out that it will eventually grow over 12ft tall. I've since been reading up on the species and know that I could just cut it when it gets too tall, but also read that it could make a great candidate for an indoor bonsai, being a tropical plant and all. My question is how would I go about starting this particular plant for a bonsai? It currently only has one stem .. should I cut off the head and trim the roots and plant it in a bonsai pot or just cut off the head and deal with roots later? I'm new at bonsai but want to give this a shot. Any help will be appreciated, thanks.
