Bonsai overgrowth

I am a new bonsai owner - my bonsai is 8 years old and a cherry tree I think. I have had success so far with a lot of new growth which I have pinched regularly. I had a good shaped bonsai with small leaves. I went on holiday and left the bonsai with my mother. She just let it grow and grow and now have extended overgrowth with full size leaves. Please can you tell me what to do now - should I severely trim back all the full size leaves or just gently reshape and have varied sized leaves ?? Many thanks Sheena
