Simply clip the rogue branches back. If you enjoyed the "orb" then trim it back into an orb. :)
You can stick the cuttings into some soil, they should root in about 3 weeks.

If you can take a picture from close up showing major branch structure, then maybe we can help you decide which to keep (apart from foliage trimming) for a more interesting design than the 'lollipop' look, but if not, maybe you could sketch them and post it.

Thanks for the help guys. when cutting the rouge branches the nodes are spaced about 1" apart. how close to the node should I cut? I know it'll die and fall off, but I dont want to rot the plant.

I f you still have cuttings off your dwarf jade bonsai you can start a new 'plant'

let the stems rest for a day and then plant them in some good drainidge compost water the compost first then stick your cuttings in the compost within 3 weeks you should have roots and a new plant.

This plant is properly called Portulacaria afra, or Elephant's Food Bush.
It is not a Jade (Crassula ovata), though it is often marketed under the name.
