next steps for potted bonsai candidates

Hello, I have some questions regarding my young western juniper and noble fir bonsai candidates, which, after digging up in Spring 2010, put in ground over winter in 1 gal. potters w/ bottoms removed. I cut away the root growth from both that extended below the bottom of the 1 gal plastic containers and pinched off new growth shoots.

What should I do next? Is it a good time to transfer to bonsai containers and start pruning and shaping? Should I wait another year while they are in 1 gal? Should I put back in ground and wait until a better time of year to evolve them into bonsai? Should I provide any nutrients to help in the shock of cutting back roots and/or the occasional branch?

I should note we live in the Willamette Valley, Oregon, and are close to starting the summer dry season. Thanks in advance for any help! I can email you pics if it would give you a better idea of what I'm working with. :)
