Bonsai from found branch - how to create deadwood top?

Hello,

These three stumps were originally one broken branch that I found next to the sidewalk during a stroll. The one section that is now showing growth was originally the center section of the branch (in the picture, it's in the middle). I'm not sure if the other two sections will grow, and I actually don't even have any idea what kind of tree it's from, but I'm pretty happy that my science experiment is showing results! The pot currently lives on my balcony, getting morning sun and afternoon shade, and the growing medium is mostly sifted mulch with some perlite. I water with 1/4 tsp of Foliage Pro per gallon at every watering (about once a week), same as with my other plants.

Being a complete newbie to bonsai, what's the best way of going about creating a nicer, or at least a more natural-looking top for my new tree (to replace the sawn-off stump it's sporting now)? I'd like to end up with a top that mimics the original broken end, which is the stump on the right.
