And another elephant ear question!

I'm digging up my elephant ear bulbs today and have made a couple of dramatic discoveries: 1. The big old bulb I planted in the spring is kind of....gone. In its place, either something shriveled or something mushy. 2. While the big bulb may be toast, there are a bunch of pink sausage shaped nubbins on the old bulbs. Sometimes just an inch long, sometimes looking like a Halloween finger. So what does a Georgia gardener do? Do I even bother to keep the old bulb, or just break off the nubs and keep those over the winter?
Thanks for any help. These guys were so awesome this summer I decided they need to come back next year.
