Harvesting Questions: Mesclun & Arugula

Newbie here. I'm growing mesclun and arugula in containers on my balcony. I'm about 40 days in and I'm not sure when to harvest these. I'm scared they will start bolting.
Also, I'm not quite sure how. I read two different methods. One talked about cutting the outer larger leaves off, the other said to just grab a bunch and cut leaving 3/4 inch of the plant. Which is correct?
