Garden Lime vs "Limestone" for 5/1/1

In full disclosure, I know I have a tendency to over-analyze things. That said, I'm trying to learn quite a bit at this point in my gardening and a lot of terms are still unfamiliar or ambiguous to me and I'm trying to learn more specifically what each of the materials I work with are, and what impact they have on the plants I grow.

With that in mind, the 5/1/1 mix calls for "dolomitic (garden) lime". When asking for this, the local nurseries I have visited didn't seem to carry, or know of, this specific product. Instead, they recommended I use "Horticultural Hydrated Lime" or "Agricultural Limestone".

My first question is:
Which, if either, of these will work for the 5/1/1 mix?

My Second Question:
Are these two significantly different products (I believe they are as the same vendor labeled the packages differently) and what are the differences between them? When would I use one over the other and what different effects does it have on soil / plants?
