I think your plants are Cold-stressed.

Did you harden off the plants by gradually exposing them to outside conditions? If they went from being inside next to a sunny window to straight into containers outside, it could be sun burn or wind burn. Cucumbers and zucchini don't like their roots disturbed so most people direct seed them into their permanent growing space. They grow so fast from seed, you don't really gain much by starting them inside. And you risk setting them back with transplant shock.

Thanks - I got them from the nursery as transplants and planted them directly into containers outside. Our temps were mild - in the 70's and then we had a cold front last week where temps were in the 50's. We are back in the upper 70's the last few days and I noticed they are starting to look healthier. Should I keep at it with them?

Most transplants go through shock of some sorts. It won't hurt to pinch the damaged leaves off.

Being in Northern part of Texas (zones 6 and 7), it would seem that it is too early for taking these summer plants outdoors. As you have them in containers, you might want to protect them until weather warms over the next couple of weeks.
