Trees/shrubs in 3x3' containers for privacy

I live in West TN where the summers get to 90 degrees and the winters get down to the teens (zone 7). I have a gas line easement running through my backyard, and I can't grow anything in the ground that gets taller than 6'. I am thinking about building 3x3x3' boxes with 2x4's and pallet wood and putting them along my back fence to grow trees or shrubs in them.

Can anyone recommend hardy plants that will tolerate container living through the seasons and a lot of sunlight? I don't have the ability to bring them indoors for winter. My first thought was dwarf crepe myrtles because they are very hardy, but I don't know if I want to attract more wasps than I already have. Help!
