Maximum Production at minimum size?

hi y'all,

I'm just learning about bonsai growing, and I currently am growing several edibles on my balcony. From what I've read, if you are growing, say, a kumquat tree as a bonsai, then you want to limit the amount of fruit it produces so it doesn't stress itself out.

What if though, you wanted to grow as much fruit as possible, what would the ideal size (in a container) be?

I'm curious to about other fruiting shrubs and trees, like Jujube. I'd love to grow that someday but I would only be able to grow it in a container and want the maximum amount of varieties possible.
