They're especially handy in areas where climates are cooler and the seed may sit in the ground in a while before fully germinating.

Your biggest risk is when handling the seeds or breathing the fungicide, so take normal precautions there -- wash hands thoroughly, don't breathe in the dust, don't let someone with asthma or severe allergies handle them, ... The treated seeds should be safe in the soil and the fungicide won't uptake into your food.

Fludioxonil is unfortunately on produce in far greater quantities than what you'd ever come in contact with via seeds, especially stone fruit.

Tree fruits are loaded/covered/sprayed with pesticides/fungicides/etc.

I refuse to eat conventional produce without washing it first and I don't eat the peels if I can't wash them before eating.

Consumer expectations, storage issues, and the need to make tree fruits travel massive distances lead to an extremely low acceptable rate of pest/disease/rot in harvested fruits.

Treated seed is fairly common and poses no risk to you. It is especially beneficial for the gardener with crops that are known to transmit seed-born fungal diseases.

As others have mentioned you are more exposed to fungicides with fruits from the store than with any treated seeds. Simply practice good hand hygiene and don't be concerned about the seeds.
