Help! My peppers are thin walled

For some reason the past couple of years i haven't been able to grow, large, thick walled, bell peppers. I don't know what I am doing wrong!
My garden this past year was a dream. Newly turned from lawn with added well rotted compost, with full sun, and weekly rains. My harvest was unbelievable! I grew a couple of varieties of hot peppers that were normal. And the bell pepper plants were leafy and not plagued by bugs, but the peppers never matured into big large bell peppers! They stayed small, thin skinned fruit. I even left some on the plants the whole season just to see if they would fatten up but they didn't. Any thoughts?

What variety are you growing specifically? The wall thickness in bells is primarily determined by the genetics of the variety.

Another contributing factor can be very INconsistent soil moisture levels after fruit set.
