how long should I Chit/Sprout Potatoes?

Hey There!
This is my fist ever post on gardenweb, so I apologize if this question has been addressed, but I've not seen it yet!
I have had some seed potatoes that I bought back in October, and they have started sprouting already! I can probably get away with planting them this early as I live in a mild, coastal climate in the Bay Area, but I am wondering if I can just let them sit there chitting until March or so? The weather is probably going to be foggy and awful until March or so, and I am hesitant to plant them.
I've moved them out of the dark cupboard they were in so that they didn't develop those white sprouts, and now they're in a cool, light place.
Is it ok to leave them there for a month or so? Can they be left to "chit" until ready for planting?
