| Hey There! This is my fist ever post on gardenweb, so I apologize if this question has been addressed, but I've not seen it yet! I have had some seed potatoes that I bought back in October, and they have started sprouting already! I can probably get away with planting them this early as I live in a mild, coastal climate in the Bay Area, but I am wondering if I can just let them sit there chitting until March or so? The weather is probably going to be foggy and awful until March or so, and I am hesitant to plant them. I've moved them out of the dark cupboard they were in so that they didn't develop those white sprouts, and now they're in a cool, light place. Is it ok to leave them there for a month or so? Can they be left to "chit" until ready for planting? |

| Once potatoes start sprouting.....well, they ideally need to be green chitted then while the sprouts are 3/4 inch long so that they remain short and stocky. I have seen the potatoes hold pretty well for a month after chitting if left out in the light. If they are refrigerated, they will kind of hold for a while. If the sprouts are broken off and the potatoes are kept in the dark and refrigerated, I don't know about them then. |

| Chitting /sprouting/greening seed potato is not absolutely necessary, although it might be helpful for faster coming up. I don't think that commercial potato farmer would take that route. As far as the backyard gardening is concerned, I would think that shorter sprout (less than 3/8" ) is better over all. |
