How to prune lettuce/spinach seedlings

I am using a 1' deep stocktank to grow various veggies, like lettuces/spinach/scallions, etc. I'm a bit behind because of the weather, etc., so I decided to buy various seedlings instead of planting with seed. When I plant them, can I just pull out all the outer leaves? I don't want to eat them, since they may have been sprayed.

Would this be okay to do? I'm thinking it might be good for the seedlings too, to decrease the top stuff, until it starts growing.
What do you suggest?
