How to prune lettuce/spinach seedlings

I am using a 1' deep stocktank to grow various veggies, like lettuces/spinach/scallions, etc. I'm a bit behind because of the weather, etc., so I decided to buy various seedlings instead of planting with seed. When I plant them, can I just pull out all the outer leaves? I don't want to eat them, since they may have been sprayed.

Would this be okay to do? I'm thinking it might be good for the seedlings too, to decrease the top stuff, until it starts growing.
What do you suggest?

I wouldn't suggest removing any leaves except if they are diseased or rotting. Removal of healthy leaves will only delay maturity further and could lead to premature bolting.

Agreed. It's very common to harvest lettuce and spinach by picking individual leaves instead of the entire plant. At that time, you could discard the outermost leaves, which are often getting pretty battered by then anyway.

If you harvest the whole plant, the oldest leaves will likely look even more unappetizing.

I'll just wait until they grow for awhile, then discard the oldest leaves and begin to eat the newer leaves.
