Why are the stems of my plants flat and fibrous like ribbon?

I am a really new gardener. I have lots of trees so that is a challenge. I do, however, have a real solid base of making compost and have been doing it for years just out of environmental awareness.

My problem is that many of the plants I started as seeds have abnormal stems. Instead of being round they are flat, fibrous and kind of twisted like ribbon. The plants are alive but not growing well and the color is off. You can see in this example near the tops. I will try and figure out if I can post additional pictures.

I am not sure if I should just rip the ones affected out and replace or if this is survivable. I am 90% sure this is not an insect and I don't see any kind of growth/fungus/mold on them.
