Several of my tomato plants have put on flowers, yet the plants are only a foot or so tall. Should I pinch off the flowers?

I just let mine do their thing, I don't pinch the early flowers. If the plant can't support the developing fruit, it will abort it.

I'm in zone 5 Indiana. The tomatoes have been in the garden just one month (since last freeze) and now have blooms. They look very healthy (used some composted horse doo-doo) and are knee high. I hope the early blooms don't abort like they did last year!
