How to harvest spinach?

How do we exactly harvest spinach? Do we pull it off along with the roots or cut only the leaves and leave the roots in the soil --- so that new leaves will grow? By the way here is the pics of recent spinach-- that I cut only the leaves and left roots in the soil.

well the smart way is to take just the leaves so that it keeps on producing...It will last forever if you do it that way. I have had spinach in the ground since March and just pulled it up yesterday as it was bolting...

Ruthie is right--just cut or nip off the outer leaves, leaving the small inner leaves to develop. Spinach is such a wonderful plant--attractive, long-lived, tasty and can be used fresh or cooked, and frozen, too! Did you plant Bloomsdale Long Standing? That does well here. Melody I've never had much luck with--perhaps it is the Texas heat.

MarlinGardener, Our Louisiana planting guide indicates that spinach should be planted starting October 1st and continuing through until end of February. However, I usually plant only in October and November. Your climate is probably close to mine. Have you tried a fall planting? If not, you may want to give it a shot.

Our favorite vegetable. I plantit in wide rows and harvest with a bread knife. Just cut it off about 2 inches above the ground. Feed it and water it and it will continue to make for months. We plant it in the fall and it will make until early April. On a wide row the spinach will be ready to cut again by the time you have cut and eaten your way to end of the row.

Yes, we plant twice--once in late fall and again in early, early spring. Just wish we had lovely Louisiana recipes for spinach, and anything else. Y'all sure know how to live!
