We have had a couple of different discussions about this issue in just the past couple of weeks here. The search should pull them up for you but a couple of the links I recall from them were

Both articles group various vegetables by water needs.

Of course the method you use to supply the water also makes a big difference as one can't always count on rain to be sufficient. And if there is a drainage problem in one area of the garden it is usually easier to fix the problem than try to work around it.

So my questions would be why does one end get so much more water than the other? How much excess are we talking about? And can't it be fixed?

Of the vegetables in your list the collards are the only ones that might tolerate excess water. Next would be the zukes, cukes, and squash. The tomatoes want consistent levels of moisture, not excesses and the peppers and eggplants prefer to dry out between watering so would likely be the least tolerant.

I would also like to add that the okra is even less tolerant. So put the okra in the driest spot you have.

Assuming the soil textures in equal condition, the one thing that decides plants watering need is the characteristic of their roots. The stronger, longer, wider, deeper root types need less watering(the exceptions here are those root crops that need a lot water ) and the shorter, weaker, shallower root types need as frequent watering as they could get(i.e. most leafy vege and squash family).
