Question about lettuces

I am growing lettuce this year, in a raised stocktank. I have green and red Romaine. It's doing great. I keep picking the outer leaves. My question is, they show no sign of bolting. Do I just keep picking and picking, or is there any sign when I should stop it, maybe because it might get bitter?
Maybe I'm just lucky. haha
The red Romaine is much taller than the green and I'm thinking maybe those stems might eventually get bitter?
I quit growing lettuce many years ago because it just didn't do well. But in this raised bed, it's doing great!

Good to eat until it bolts - both of them. Even not too bitter right after bolting but before bloom head develops if you soak it in some ice water before refrigerating. I have both going to and even down here they aren't bolting yet.

Romaine clearly signals when it's about to bolt - the outer leaves flatten out to the ground. But you're picking your outer leaves.

Keep it in partial sun, in cool spot.

Here is some of my BIBB lettuce coming along.
Leeks are in the background. Most of the patch is not see.
I like head lettuce more than Romain .

Keep eating! Mine doesn't bolt even through 80 degree weeks - takes awhile in the 90s before it considers it. Cilantro on the other hand (and onion) forget it.
