I'm not sure you can blame the epsom salts. Far more likely cause for pepper plants shedding their leaves is overly wet soil that isn't allowed to dry out between waterings. But either way now, all you can do is wait and hope for new growth to develop.

Hard to kill a pepper plant. Like Dave said, overwatering is the usual cause for leaf loss. Best way to water a pepper plant is water thoroughly, let plant almost wilt, water thoroughly, and so on. We're not talking about summer daytime wilt--- Slightly wilted in the morn, water thoroughly... let dry out.

What makes you think you need epsom salts? The only time I use them is when I see the symptoms of needing them.

Like I said though, it's hard to kill a pepper plant. It should rebound no problem.
