Spigariello (leaf brocolli)

I started 25 Spigariello plants under lights in late January and transplanted them into raised bed on 4/12/14. They are now up to 2 feet tall. How do I harvest them for greens? I thought I would just cut off the leaves and leave the stalks and the tops of the plants which should eventually flower and produce seeds that I can collect. I plant on boiling the greens, then draining them and freezing them in plastic bags. When my wife wants to prepare them for a meal, she cooks them with garlic in a covered skillet. Very tasty! Any advice on harvesting?

Exactly, just remove the larger leaves as needed, just don't completely defoliate the plant.
