Pull chard or keep it? Zoning in beets?

OK, two unrelated questions.
1. I'm pulling out spring veggies from my high tunnel to make space for eggplant and hot pepper transplants. The aim is to keep the tunnel at 85-90 degrees every day. I have a 100 sq ft patch of beautiful chard in there and I'd hate to pull it out. So here's a question for you warm-climate gardeners - does chard turn bitter if exposed to high 80s almost daily through the summer? I've only grown chard outdoors in summer and it never gets really hot here.

2. Is heat-induced zoning in beets merely a visual issue? Does it affect flavor?
