| I know for a fact that I bought black beauty eggplants but these are small and very yellow! Is it possible that they were mislabled and this is a different variety? Are they malnourished? | I agree I think the tags must've got switched. This happened to me last year too. I thought I had gotten Black Beauty, but they turned out to be 'Easter Egg' eggplant variety. This variety is white in colour right from the start. They should be picked when they are about the size of an egg and shiny. Did the fruit start off white and then turned yellow? Once it turns yellow it is overripe and will taste bitter. I also read somewhere that there are yellow egg varieties that are more of an ornamental plant and not edible. I think those are the ones that are yellow in colour right from the start. (Sorry, Couldn't find the link to the article.) I found the ones I had grown last year didn't taste too bad. They were a little bland and sometimes if it had gotten a little big it was a little hard, slightly bitter and seedy. Sometimes it was hard timing it when the fruit would be just right because even a day over it would become overripe. Here's what my eggplants looked like. |

| Wow those are some nice looking eggplants! No mine are green for like a day and then yellow after that. Must of been a switched label.. Oh well they should taste that same fried! |

| Thai yellow is ripe when it turns a rich deep yellow, but there are other thai varieties that start yellow and turn white when they're ripe (sorry, can't remember name of that one). Gardenerenthusiast, your eggplant looks great. |

| Just remembered that there's also a Brazilian Orange about the size of those, so maybe wait and see if gets darker. |
