Chard is not behaving!

I normally plant chard as a winter vege along with kale and some others.
The chard usually gives me 2-3 years without bolting! I changed a few beds around this year and the chard has decided to bolt after only one season! Grrrrrrrr!
I keep cutting it back, and it keeps coming back flowering!
Question is, should I let it flower and collect the seed, or should I keep cutting it back until it cools down, or re-plant?
My Kale is doing fine and the stuff I cut back is coming back slowly. Sound OK?
