Honestly I have never seen one turn red in all my years of growing them. But the yellow color will be quite apparent to you once you see it so leave them longer - it won't hurt anything.

Colors may vary from variety to variety but yellow is what I go for.

I grew some sweet ones last year, and they do eventually turn red, it just takes quite a while. I did not notice much difference in taste either, so I just picked most of them when they were yellow.

Yeah, they'll turn eventually, but it will likely take over a month for them to do so after they reach full size.

The ones i had did turn red when fully ripe, and they also got a lot hotter when they turn red. But if you allow one pepper on the plant to fully ripen, then all the rest will turn red as well, regardless of their size. This is because the plant has finished its job of producing viable seeds. From now on i'll pick them when they just begin to turn red. Then after a few harvests i'll let them turn red so i can get good seeds.
