| Hi. I'm totally new to these.... I picked some.... the ones that the pods were completely purple... those look good... but the ones that were more than 1/2 to 3/4 purple... look "not as done" growing as the completely purple. If I leave those alone, will they "ripen" or is that just a dumb question?! |

| For shellies, wait until they are fully purple. Otherwise the peas will be undersized. Less mature pods can be used as snaps. Sometimes snaps and shellies are picked and cooked together. Jim |

| The following link takes you to a video where the webcajun shows the five stages of the pink eye purple hull peas. He has quite a few videos on growing, harvesting and canning them. I pick my peas beginning at the "Racing Stripe" stage and continuing until just turning all the way purple but still soft. |
