Iceburg lettuce seeding

My wife has been doing the 'regrow lettuce in a tray of water' thing for the past month or so. It hasn't given us a bumper crop, not by a long shot, but it has given us enough to be able to top off sandwiches and burgers. Which, for being in Florida, is good enough since I can't grow them in this heat/humidity.

Now one of her lettuce 'heads' (it hasn't actually formed a head) has sent up flower stems. I asked which one it was and she said she thinks it is the iceburg. I did some searching on Google but could not find a satisfactory answer to my question: Does iceburg lettuce (or lettuce in general) require cross-pollination with other plants in order to form viable seed?

I can't grow lettuce now, but I might be able to grow it through our winter. If I can harvest seed from these flowers... well... it will save me two bucks.
