Tasty Purple bell peppers

I was on a trip out of town and accidentally found hirts greenhouse ' in person', so decided to stop in. I couldn't resist a bell pepper named 'tasty purple'. I have never grown a purple variety before so I have a question ...I thought bell peppers of a different color than green, gradually turned purple as they grew bigger, but started out green. I had some come right on deep purple though so I thought I'd better pick them or they'd go bad on the plant. It's embarrassing to ask, but as gardening is a learning experience to me every day even as long as I have gardened, it's the only way to learn. Should I have left these on the plant, or was I right to pick them ?
