Mystery mammal

We've never had a problem with groundhogs or other mammals until this year. Whatever is responsible is eating only romaine lettuce, beet greens and bean plants. It is not touching tomato plants, chard or lettuce mixes. Any ideas what this picky eater could be?

We live in New Hampshire. A few years ago, the property owners across the street clear-cut dozens of acres of pine forest. I wonder if that is the reason for our new guest.

Specify how long this has been going on, and whether plants are nibbled, ragged, or chomped to the ground.
