I don't know how long they'll last in the crisper, but I store mine in a rubbermaid container filled with water. They've been nice and crisp for a week now.

In the past I've kept store beets for a couple of weeks, with maybe some drying out a bit - I'm not sure on that last. Your garden beets are fresher, so they should OK for that long.

We dig the remaining beets in Oct, then put them in cold storage and throw the remains to the sheep in April/May. They should stay good until Feb/Mar anyway.

I use the greens as they come. The beets themselves I throw in a heavy ziploc bag WITHOUT washing them and leave in crisper in fridge. They stay nice at least 2 months. I swear. I take out what I need and wash and use as I go.

What about if u buy them from the store in a jar ??? i have a big can of beets and i open them and put them in jars im not sure how long they last can someone help me plzzzz

Someone I know said they bake them and freeze them to use all winter long!

I have picked beets in November and stored in gallon ziplock bags in my refrigerator until early March. I find the flavor is good thru January then they seem to loose their flavor the longer I store them after that. My solution was to grow less of them as I had way too many beets and carrots in the fridge.

The space used up got to be an issue too. We only own one refrigerator. Wish we had another to store all the apples, beets, carrots ect. Always easy to find friends willing to take the excess.
