Chard ?

In the past, my chard has lasted for about 2 years before it bolts.
This year I got plenty during the mild winter, but it keeps bolting.
If I cut it back just before the fall, will it grow right, or continue to bolt?
Should I just pull it and re-plant for next fall? We've had some crazy HOT spells (90s-105) for 8-10 days! NOT usual in this neck of the woods!
Also, I'm not sure how to collect seed from chard! I'm trying to collect seed from everything I'm growing these days! (recently retired!)
