could I grow lettuce in this?

I have the idea of using a kiddy pool (the round plastic kind) to grow lettuce in. The depth is about 8". Can I get a decent sized lettuce using this, or would it be too shallow?

I'm also debating growing stuff like spinach, arugula, and sorrel in it.

Would it be possible to grow cauliflower, broccoli, and/or cabbage in a kiddy pool with a depth of 8" or would it be too small and/or the depth too shallow?

I don't want to waste money or space in the garden to grow this if it's not going to work out and/or I'm going to get stressed out/undersized plants.

I'm debating doing this with the above veggies cause I know they all tend to have shallow root systems.
